Knife Recommendations

I have 10 MKC pieces including 2 Blood Brothers, a Hellgate Hatchet, Battlegoat, etc.

In fact I just got a couple $20 tees from them today.
Want a BB wargoat? 😁 I absolutely love the flattail, super cub, whitetail, skinner, and mini stoned goat. I have a couple of the ultras too. If you got one of the recent mystery shirts they're great, super comfy.

The standbys are 10”butcher , 12” cemitar , lamb skinner , 6”curved boning , 4” rabbit knife

I’ve processed 50pigs 8 bucks 4 elk in the last 5 years with a Milwaukee folding knife and box cutter from HD and a 12” butcher and 8” curved boning knife

A box cutter with a hook blade makes a good prep for the skinning knife.
 
So to be fair I’m no kind of professional anything but I do break down a lot of wild game and this kit is $210 on Amazon and pretty legit. Easy to sharpen, holds an edge decent, etc.

I recommend the Henckel 5 star sets. It’s made in Germany, or at least was when I purchased my set 20 years ago. Doesn’t seem to have increased in price so check where they are made now- I know they moved some of their production lines to China which is unfortunate.

Why I recommend it-

The handles have a special mold process eliminating crevices for bacteria. No rivets or wood.

German proprietary steel that goes through an ice forging process which is excellent against staining:/rusting. Unlike other carbon steels that will rust if you don’t properly prep and wipe down every time you use it.

Affordability- for the price and quality- they can’t be beat. My set has lasted 20 years, and I use my knives- they still look great- aside from occasional sharpening.

I can recommend other German made sets in the 1.5-2k range but honestly you are not getting anything spectacular at those price points.

I bit the bullet 40 years ago and bought my Mom a full cooking set, she still uses them today.

My wife has Cutco and I have Shun.
I use her Cutco more than my Shun but when I need actual control/precision cuts, I am only using the Shun.
The only real problem here is that we share a big knife block and I can't get her to wash/dry my Shun when she is done with them.
I keep finding them left wet in the dish rack and thats no good for the carbon damascus...

Yeah I have the same problem. Our Shuns got beat up from years of abuse (mostly my wife). The new set will have to endure similar abuse or I could just hide it. :P

Randall, you need to be real. You don't "share" the knife block with your wife. As far as wives are concerned, it's "their" knife block and they are just letting you use it. My dad taught me long ago, it's not worth the fight, just say Yes Dear or Thank you Dear.

Fond memories: we bought Cutco over 50 years ago, when first we were married. One of my wife's students had the sales gig and came over; we kind of ruined his presentation by stepping all over the features he wanted to emphasize, but we did buy them.

Used them for years, then I got my Shuns. Cutco is still out and reachable, but never use them any more.
 
Randall, you need to be real. You don't "share" the knife block with your wife. As far as wives are concerned, it's "their" knife block and they are just letting you use it. My dad taught me long ago, it's not worth the fight, just say Yes Dear or Thank you Dear.
Well it is a Wusthoff block that she bought specifically so we would have room for both sets of knives in one block.
